Jackfruit Rice Cake

Jack fruit Rice Cake is very Delicious and Enjoyable Dessert Dish in Kerala.It is prepared Especially during the Heaty afternoon or summer Days. The rice flour coat leaves a cooling sensation in the mouth and the jack-fruit gives a burst of strong aroma when bite. Its very simple method to prepare this sweet dish.

Ingredients

Rice flour 180 gram
Sugar 80 gram
Coconut milk 500 ml
Salt to taste
Banana leaf 12, each in 15 cm square
Jack-fruit 12 pieces

How To Make

  • Combine Rice flour, Sugar, Salt and Coconut Milk together until it become well smooth.
  • Boil the batter slowly and stirring constantly until thicken.
  • Remove from fire and leave to cook.
  • Place 1 tablespoon of batter onto the leaf, place jack-fruit on to and cover with another tablespoon of batter.
  • Fold leaf in thirds lengthwise, fold down both ends.
  • Repeat 12 times until all ingredients are used up.
  • Steam for 20 minutes, remove and leave to cool.
