Kadumanga Achar

Kadumanga Achar is very popular in all over India as well as over the Whole World . The most common South Asian-style pickles are made from mango and lime. Homemade pickles are prepared in the summer and kept in the sun during daytime while stored in porcelain or glass jars with airtight lids. It is easy to Make Kadumanga Achar in Kerala. Ingredients

Unripe Mango 5 no
Chilly powder 3 tbsp
Turmeric powder 1/2 tsp
Salt to taste
Gingelly oil 250 gm
Fenugreek(Uluva) powder 1 tsp
Asafoetida powder 1/2 tsp
Vinegar 250 gm
Curry leaves 1 bunch
Mustard seeds 1 tsp

How to Make

  • Cleanly Wash all Pecies of Mango with Fresh Water
  • Cut the washed mangoes into small cubes.
  • Heat oil in a pan.
  • Splutter the mustard seeds and fry the curry leaves.
  • Add the mangoes, chilly powder, turmeric powder, salt and enough vinegar.
  • All Ingredients Mix Well with Large Spoon
  • Boil the Mixture for a While and Switch off the flame.
  • Mix in the uluva powder and asafoetida powder.
  • Cool and store in airtight containers.
